However, it may be worth mentioning that if you are happy with the color and texture of the surface, then the hair side should be just fine for working on. You may or may not get anything off the flesh side. The flesh side may still be suede like. If it is, then you won't do any fine work there. If it is white, then it is probably well enough processed and the oils may be sufficiently out of it, but you won't know until you actually so some tests and paint some layers of paint over each other. Also, a discolored skin may work when the discoloration is from the coloring of the hair on that creature influencing and adding skin pigmentation, or it may be from half-assed preparation, like failing to bleed it correctly. If the discoloration is from not being stretched, then it will suck because it is just rawhide instead of parchment (the stretching and scraping being the difference). On the other hand, some discolorations are altered by coloring the skin with pigments. If in doubt, test it out!
