I recently submitted an 11-page article to the Ars Caidis on Coptic Knotwork.
How about a 2-hr class on "Knotwork: Roman, Coptic, Celtic, and Arabic" ?  It 
would still be the same dots method stuff, but focus also on the cultures 
wherein it appears.

Such a class needs to not conflict with the embroidery threads class I'm also 
teaching.
