Might I also suggest a few other classes for the how-to section, such as

advanced painting - shading, washes, effects
painting people
draping (clothing on people or objects)
diaper patterns
icanthus leaves



On the calligraphy hands, I'd suggest breaking it out into several hands:
Uncil
Block
Arabic
and perhaps a class on how ot figure out how to make the hand of what
you are looking at.

Under materials, you might want to add
Reed pens
Parchment, how it is made, what you need for making a scroll, the
different types
egg tempura

And, what is illumination without a class on gilding?
guilding supplies
guilding techniques
